hwmon: (pmbus/core) Replace deprecated strncpy() with strscpy()

strncpy() is deprecated for NUL-terminated destination buffers; use
strscpy() instead.

Compile-tested only.

Note(groeck): strscpy() uses sizeof() to determine the length of the
destination buffer if it is not provided as argument.
